The only real setback I can think off is how quickly you can run out of memory downloading themes nd apps... =). After u get ur iPhone here's some tutorials on how to jailbreak 4.2.1...

Well if you have a pc the untethered jailbreak should be out for pc soon. Mac version is already out. The jailbreak for 4.2.1 is really easy. You just put into DFU mode and it jailbreaks for you. The only setback is loss of warranty
If u restore ur iPhone/iPod to stock firmware (unjailbroken firmware) apple cannot see that you jailbroke it... I have replaced my iPod 2nd gen twice due to the volume buttons not working... And both times my iPod was jailbroken then restored nd apple replaced the iPods no questions asked.

. Maybe I'm just lucky, but I've heard as long as you don't have cydia on ur iPhone/iPod there is no way apple can tell they were jailbroken
