Go to your Main Hdd (for example (c)

C/Users/(your User) Brendan/AppData/Roaming/Apple Computer/Mobile Sync/Backup

now this is all your backups, i had 3, the smallest size (3mb) this was my latest backup, deleted that automatically, there were 2 others about (170mb) i left them both, went into itunes and WOOOO I got my Original Backup Back!

So out of all those folders, copy them somewhere safe and go to Properties, it will show a date of the last time you used that "backup" file, if the dates mean nothing to you, use 1 folder at a time, and thats why you have the others copied somewhere safe in case the first backup you try wasn't your original.
