Go into Contacts and then save them there with their Apple ID as their email.

When you're in your conversation look at that guy image in the top-right and press it click "add new contact" and that is

Everything you send with pictures is free, everything you send using iMessage is free But if you don't have Wi-Fi it will use Data Plan or Messages from your contract so keep that in mind it is free if you are in Wi-Fi. But you can turn off that if you don't have Wi-Fi the iDevice use data or messages go to settings and search for it.
