Isn't it possible to do this with only 2 people in game?
I was thinking maybe if you set your online party settings to invite only, no one will be able to join?

No the minimum is 4, and you need to controllers because its 8 players. Yes if you set your settetings to private your friends will not be able to join but randoms will.
