the firmware is stored on the NAND chip. So if you format or use a new HDD, it will not make any difference, you will still be on the same firmware which you are on now.

is there any way to take nand chip out cuz i know thats just flash memory and flash memory is not always needed...but im better at computers then ps3?

oh really ? what would happen if you take the CMOS from mobo ?
or the RAM ?
you're good at computers but you'd take away the ability to boot the gameOS ? nice :p
