I wonder if you possibly can change the in-game language on ps3 MW2 so that you play on another server like French.

There's no server, only hosts, which doesn't conflict with regions or languages. You wouldn't have any problems joining a friend's game, as long as you're on the same version (ie 1.11 or 1.12).

Just as well, you won't be able to change the language of the game without installing the game all over with that particular disc.

If you're installing, using another disc, which has another BLES/BLUS ID, your PS3 won't be able to relate the two versions of MW2, which means you can't continue your Single Player progress... I'm however unsure about your online profile, but I assume it wouldn't be affected.
