As with most games running the engine Call of Duty uses if you start a mission on Veteran, Save and Quit then go to Mission Select and choose a mission on Recruit and quit on the loading screen it messes up the difficulty setting.
It's very obvious what effect it has on Call of Duty 4 or Modern Warfare 2 but I couldn't seem to master it on World at War. For some missions the AI would be really idiotic and on others there would be seemingly no change but all of them would award the Veteran trophies.
So I would say just give it a try and perhaps you'll play a mission and think that wasn't so bad and get the determination from that to finish the other missions.
