As soon as i hit fullscreen it stretches the video across both screens so annoying, any help would be great!

Did you ever get this answered? I have a dual monitor set up. One monitor is always in full screen mode rather it's a game, or a youtube video.

It should automatically do it. One monitor is connected via HDMI the other via VGA.

I'm able to run Minecraft full screen on one monitor, and youtube full screen on the other at the same time.

How are your monitors connected?
