What would be the best direction for me? Should I wait for Windows 8 to release, or should I get Windows 7 or Vista on bootcamp instead? Like I said, I'm really just doing it for computer games and Steam. So it's not as though I need anything extravagant.

What mac do you have because SW:KOTOR needs some quite hard specs. And youll loose some specs from your mac when you are using bootcamp

Before you decided on the OS, have you considered running a VM? For example something like Parallels Desktop 4.0 or whatever the newest is, and you obviously have to supply the OS. Now talking about OS's I'm not to sure when Windows 8 comes out, but I'd go for Windows 7.
