I think this really depends on what kind on user you are. I would read up on each of them and decide which one would benefit you the most.

I have windows 7 ultimate which for most people I don't really think is necessary. I don't utilize all it's features but I got it for free so whatever.

Worth the Weight
It depends on what kind of machine you have. Home Premium can handle 16GB of RAM I believe. In Windows Ultimate/Professional you are allowed to use as much as 192GB of RAM.

Good thing I have Windows 7 ultimate then cause I have 24gb of ram

I have Windows 7 Ultimate and like it and use some of it's features (ex. Bitlocker), but I haven't tried the others much. Home Premium and up would be the best ones.

But if you mean "download" as in pirate, just go with Ultimate. If you mean buy, then I guess HP would be fine.

ram is also a mobo factor to most handle 32gbs now think mine handles 16

i recommend you Win7 Ultimate, it has a bunch of features that's true, but you can always deactivate them. But ultimate will surely more complete than other editions.
