but you see, every team ive come across with pace has been easy to play against because they all do the same thing, and its easy to shut down. i dont get the appeal of it

Although, like you said, if a player keeps performing the same passes and through balls over and over again, it becomes easier to stop and counter it. Pace is really useful for counter attacks and quick breaks which can lead to many goals.
