Crumpets and tea?
Its all dependant on your budget,
An Hauppage HD PVR is by far the best you can get in terms of quality. However its expensive.
A cheaper one may be a Dazzle DVC 170, DVC 100.

Hauppauge HD PVR You must login or register to view this content. around $200 You will need component cables from your system and component to the TV.
Dazzle You must login or register to view this content. you will need composite a/v cables, and splitters. Dazzle does not support HD.

Not my video!
Don' let the video fool you if you are using it for PS3 its the same idea.

The splitters are available at any lectronics store for about $5

As far as editing software, everyone swears by Sony Vegas. If you buy it you will spend around $600 but you can find some pirated versions so I have heard. I use Pinnacle studio14 HD. Was about $60
