Pretty sure there was a tweak on Cydia for this. Think its called Tetherme or something like that?
Don't hold me to it as I can't check right now.

Tetherme doesn't give you unlimited data, all it does is allows you to bypass carrier restrictions on tethering your device to a computer or other device. There is no way to bypass how much data your carrier gives you, without paying for it. The only thing you can do is ask for more data.
