I went with a Xeon E3-1231 V3 because it's basically the same thing as a i7-4790, but with the IGP disabled, which is why it's cheaper than an i7. Since it has the IGP disabled, you will need to purchase a GPU if you want to be able to see anything on your monitor. You can get something low-end, such as a GeForce 210/Radeon HD 5450.
You're probably wondering, why would you buy a Xeon E3-1231 V3 and a GPU when you can just get a i7-4790 which already has integrated graphics?
1) It's $20 cheaper : i7-4790 = ~$280 vs. Xeon E3-1231 V3 + Radeon HD 5450 = ~$260
2) Getting a dedicated GPU, no matter how low-end it is, will take any sort of stress from graphic tasks off of your CPU.
