Im on the latest firmware, and have heaps of knowledge about jailbreaking as ive done it before, but lost track with all the updates. Is anyone able to help me downgrading and jailbreaking?

Not currently possible to downgrade or jailbreak on 3.60+. If you are indeed on 3.61 or 3.65, you're gonna need to buy a new PS3 and then update that in order to sync w/ the servers. Not exactly a great expenditure of $300, but that's the only way.
