I want to keep access to mai files but have no idea how to use a SATA cable, what they look like, and if I'm required to take apart my PS3 to use one.
Should I keep my PS3 JB'd? Should I unjailbreak it, and what are the recommended precautions and actions for doing so?
Thanks.

Quote this post so I can see your response, ofc.
Edit: I've done some brief research on the topic, still haven't come to an absolute decision. I'm also derping.
Jail-breaking isn't dead, it is just rather stagnated at 3.55. There does not seem to be anyone working on a current jb, as many have stated it has become almost impossible to break sony's new algorithm. To be honest I would say keep it JB, it is far more useful that way. If you absolutely have to go online you will have to buy another ps3, this is unfortunately the way it is. I respect that you wish not to give sony more money, so as a thought you can get a used one, Sony doesn't get any money from used consoles. Something to think about if and when you have the cash.
