my ps3 is a CECH-2501A can that be downgraded? ( i read the little chart on the website but i dont understand it)

Also i hear its dual boot something like that. if im correct that means i can switch back and fourth firmwares.. i have two hard drives . can i switch between them like one of em jailbroken the other is not?
