It seems like this all started when you removed and applied new thermal paste. You could have put too much or too little... both will have the same results as the other... they result in overheating. Honestly I'd remove the thermal paste and reapply some arctic silver paste and only use the size of a pea or grain or rice and use a old credit card and apply it smoothly so there are no air bubbles in it.
If that doesn't solve the issue then I'd reckon that your ps3 will eventually YLOD.
thanks for replying...i did re-apply the thermal paste, with different brand though...arctic mx4, noctua nt-h1 and tuniq tx-2...same problem occure, yes with some method like rice grain, line, dots......oh well...reflow or maybe reball might help...i'm going to a repair shop now...coz i dont have the heat gun nor an oven...i'll update the result...
update 1 : so i was in a repair shop, owned by a friend of mine, we tested LA NOIRE...guess what! bam! shut down...and i search on google...interesting stuff i found...

update 2 : so the reflow with heat gun has been done...my friend called me on my cell [coz i went home], he told me that the PS3 went smooth with toy story 3 [no turned off it self] and i let him to do a stress test with my PS3, other games like LA Noire and Black Ops 2 are next test...i'll be back with update...
ps : some said that the trick with an oven will do too...anyway try look around, do it with caution and know the risk before...safety first...
update 3 : well....after two days...the only game that make my fat turned itself off suddenly "again"...is Toy Story 3...i call my friend who reflowed my ps3....he ask me to return to the shop...and do the reflow again for free...
