Depends on what game...

If it was for W@W then you could just replace the patch.ff file but if you referring to newer games with .SPRX menus then you need to replace the EBOOT with the one that is in the menu file/folder and then place the .SPRX file in the "tmp" folder of "Dev_HDD0" this is not certain for all .SPRX folders it just depends where the creator wants it to be placed so make sure to check the forum for the precise locations.

You can do this all with MultiMan if you wish just by placing the files on a USB drive and loading MultiMan and pressing "Select + Start" together and it will bring up MMOS which allows you to browse, copy, edit and delete files within MultiMan or you can use a FTP client to connect to your PS3 while MultiMan is open which makes it slightly quicker and easier to navigate IMO.

im tryin to get mod menu for cod4 and mw2 i think i did it all right but when i join a private match myself nothing works anyone got a video on how to do all this thanks
