The setup I use is PSNinja V4 to wipe any history before going online of using home brew apps. (Home brew apps include things like multiman, etc). I personally don't use multiman to play games on but you can burn disks onto your hdd I believe. Also, I use PSNPatch before going online and I currently use the 'isable CFW and exit' option but there's other options for your console's situation. Finally, to install and edit stuff on my hard drive, I use Rebug's Toolbox which has an inbuilt FTP transfer program but if you're not on Rebug CFW then you can try BlackBox FTP home brew.

Depending on the game, mod menus are different to install but some of the easier ones to begin with are MW2, WaW and CoD4 as you only have to copy and paste a modified Patch_Mp.ff file for it to work. Newer call of duty games require GSC injectors from your computer.
I'd say the best thing to do is just keep researching as it doesn't hurt to read for five minutes on some forums
