im guessing if he put a valid email into the ps3 when he changed the details aftet i sold it him. when he logs in when psn goes back up the email link will go to the email he used.

Have you downloaded anything from his Playstation store? If so, you're fine, downloading something from the account activates the account on that PS3, then you can just change the password on the system, no e-mail required.
