Suikoden II was a pretty great RPG on PS1
Final Fantasy VII always a staple
Or Final Fantasy III (IV on PS1)
Chrono Trigger on SNES and Breathe of Fire II, and Lufia II all on SNES

Dragon Quest is so damn hard too. Almost as unforgiving as old school NES RPGs. But still extremely fun. amazing art
