You can get the Speed Demon and Intrepid Mortal trophy within this single save. It is saved at the shrine before the final boss. You also have max health and stamina, and all time attack items as well.

For the Speed Demon trophy just defeat the Final Boss and let all the unskippable cutscenes finish. You have 3 hours left so you should be fine.

For the Interpid Mortal trophy just eat a fruit, collect a lizard tail, defeat a colossi (anything that boosts health and stamina). The trophy does take a while to pop so don't panic. If it doesn't pop just keep collecting things that upgrade health and stamina.
