This happened to me too, but I didn't even try jailbreak it. It just happened over night.
Couldn't find any guides so I just brought it to a store in Ireland that fixes them, they didn't know what was wrong with it and they couldn't fix it so they gave me a new one and took the broken one.

Good luck Winky Winky

Alright.. quick fix that got it out of recovery mode is download black rain and plug in your ipod and run it. It brought mine out of it.

As for your update problem.
What firmware is on it?
Have you tried downloading ipod touch firmware from a site... then holding shift then pressing the restore button in itunes then selecting the firmware you downloaded.

I say this because it sounds like its trying to connect to the itunes server to put new firmware on but it cannot access. therefore just download it manually and give it a go.

Heres a tip, upgrade it manually, Put it in Recovery mode, or DUF mode like you would when you would be restoring, Shift and left click on restore and will open some file location, download a ipod update and try updating and that might remove the jailbreak or fix it, google for the full guide Winky Winky. Search how to downgrade a ipod from duh duh duh to duh duh duh, don't really matter that much.
