Umm, my best guess would be to wipe it clean, then re-sync everything back on to it. But you could try holding down the menu button for a few seconds, i think on iphone thats the rest when it freezes and this might cure it.

it all depends on how many different modifications u have downloaded onto your iphone. My ipod touch was going awful slow at one point, even turning it off and on took long.

Your best option (as much as ud prefer not to) is to restore it and then rejailbreak.
