When you sync your iPhone it should do all of this automatically. If not, when your iPhone appears in the iTunes control bar click it and check the settings as it should always take a complete back up. I back mine up to a mac, and when I do it automatically launches iphoto to transfer any images on there. I’m pretty sure that gallery in windows does the same, although you may have to manually transfer them.

Plug your iPhone into iTunes and it automatically starts to perform a backup after you press Sync.
If you don't want to do that, just go to Computer>iPhone and you can drag some files out of your iPhone to the place you want to save your files. [This method won't work for everything, so a iTunes backup is recommended]
