You cant, unless you restore it !

You can delete it with cydelete, if you still want themes and no cydia.

Another suggestion: You could just hide cydia if you wanted to.

You can without restoring....

for whatever reason you would want to do that is unknown, however to do it;

-Go to cydia an search for cydelete.
-once installed you can delete any app etc downloaded from cydia.
-HOWEVER to delete cydia itself, go to settings and scroll down to the tab that says; 'Cydelete' and open it.
-Turn the cydia tab to 'Off' under protected applications.
-then go to the spring board and delete install0us/cydia like you where deleting any other app.
