This is happening on some devices as the documents directory permissions are out of wack!
If you're terminal savvy, you can ssh in and issue the following command:
chown -R mobile:users /var/mobile/Documents
chmod -R 0777 /var/mobile/Documents
Or if you have ifile, set owner of /var/mobile/Documents to mobile and permissions to read write execute for all. That will fix the issue
