Before I start I would like to point out that iOS 5 is still in beta. Beta 1 and Beta 2 have been released, and both can be hacked the same way. Instructions and download are bellow. I do not, in any way take any fault if you screw up following this tutorial. This tutorial is for demonstration purposes only. Neither do I and / or NextGenUpdate host the downloads; they are hosted in a server not owned by neither.
I would suggest you using iOS only for the iPhone and iPod as the iPad version still has various bugs including (non-working Safari, YouTube, and etc.).
I will also only go over the iPhone and iPod version of the tut in here. If you would like the iPad version quote me, and I might add it here.
