As far as I know you can't edit leader board stats.

Pretty sure there was a tool that allowed you to in game stats but it was always messed up if I remember correctly.

It is possible i know how to make the tools, but as far as i know there has been no tools released. If you look in the Modding Tools section you may be able to find one but it may take some time ti find it.
