I too have been looking for the last 2 hours, and no there aren't any zombie mods for the latest update or ascension. If you don't mind losing online and first strike, then you can do the noclip or super speed + jump + melee mod for kino der toten. I'll find the links in a sec. Basically you'll need a cfw (or 3.41 jb) ps3 with a file manager. All the guides use FTP, but if you have a USB stick, I thing file managers easier.

I won't explain to you about CFW, if you don't have it now, and you've been online within the past few (2-4?) months, then its already too late, and stop reading. If not carry on.
YOU MUST BE ON CFW TO CONTINUE

Extract Comgenie Awesome File Manager. Copy ComgenieAwesomeFilemanager.pkg file to the root of your USB (not inside any folders)
Now run the Black Ops Patch Downloader and get BLES01031 1.05 Download it (a .pkg) and put that on your USB too. Also put the eboot.bin you downloaded earlier on your USB.

Black Ops Update file 1.05 for bles01031.pkg

Delete black ops game data from game data utility on PS3. Goto install package files. Install Black Ops Update and Comgenie awesome file manager. Run comgenie awesome file manager, and on the left column goto
dev_hdd0 - game - bles01031 - USRDIR
Now use the right arrow stick to use the right column.
goto
dev_usb000 (some numbers will come after 000)
select EBOOT.BIN and press circle whilst it is highlighted on the right column to copy it across (don't worry if there is an eboot.bin already on the left).
Quit

Play Black OPS
Whilst at main menu continuously press L2 + R2 (quickly) and go round the back of the chair to the PC, and type in "noclip zombie" DONE
