I use a HDMI cable for xbox and play black ops and it works fine on that... there's no reason it wouldn't work.

Try putting your AV cable back in then,
Go to system settings, Then display, Change to HDMI 1080i, Turn ps3 off, Put HDMI cable back in, Then it should work

really the steps are fast
have both cables connected
display settings>HDMI>switch input of your tv to HDMI>automatic> and done.
after that put away your AV cable
