No you do not need to have FTP open all the time.

Once your patch is transfered to an "Online accepable PS3" you can play online with no need for FTP what so ever.

Also

To play with the patch enabled, you must be the host of the lobby.

To play without the patch, just join anyones lobby where your not the host.
