Of course that's possible

To revert just the game back to the legit state, simply delete your "Game Data" from the XMB and relaunch MW2, this will download clean legit data again.

To revert your PS3 console back to a NON-Jailbroken console. Simply download the original 3.55 update, and update your PS3 as you would normally.
