Private match, don't choose a team when the game stars just hit start and you'll be a spectator.

When you make the Private Match, go to Game Rules. Go down to the Spectate Option and set it to Free. Then when you go to start the game, and you choose team, select Spectator. Then [For PS3] press triangle to go into free mode. There you go, then use the trigger buttons to move up and down.
