Unlike the release channel, which is currently at 6.0 you get the latest fixes and improvements immediately rather than periodic updates, the main improvements over the other channels are RAM usage, Javascript performance and HTML5 implementation, although FF6 got huge HTML5 improvements recently.

Despite them being the most up to date they're extremely stable -- I've only ever had it crash once and I've been using it for about a year. In todays build alone there were 62 fixes, primarily javascript improvements.
