are you on about xbox live or UT as in UT they are transferred i believe not sure bout live not sure if you need "live season" for them updates.

Torres is in Chelsea, you need to go on My FIFA 11 on the menu > Squads > Check Update, if theres none then just manually change the players to there new clubs Winky Winky

They will make an update, they do then in summer they don't so you buy fifa 12.
