Pretty sure I'm not the first person who found this, but first to post here

Follow these steps

1) Play Match
2) Tournaments
3) Single Player
4) Ultimate Tournament
5) Press A, then click Advance
6) Press A
7) Select Kits for both your team and the opposite team
On the screen where it says Play Match > Team Management > Game Settings and Xbox 360 Controller/PS3, go to Game Settings and press Y (Restore Defaults)
9) Click Yes if prompted
10) Press B/O and check if difficulty is Professional
11) Enjoy
