Agreed, Herman Li is great. It's almost scary.

There are a lot of great guitarists, and you cant compare them, because the genres they play are so diffrent.
But if i have to choose i say Eric Clapton.
But i also really like Tom Morello, Slash, Jimi Hendrix, Tommy Emanuell, and the list goes on and on

Buckethead. Nobody puts more soul into their music in a more quirky and different style than he does. He'll have one song with a face-melting solo (Final Wars, Soothsayer) and other songs that are just complete peacefulness (Too Many Humans, Electric Tears). I love what he can do with the guitar, it's just amazing.

Mick Thompson from the band SlipKnoT is the most amazing guitarist I have ever heard.
