I love mexican food, but have gotten rather bored with the same old thing, so I need your help. Post your edible recipe below and the one that gets thanked the most will win the 500,000 vBux. The same old mexican food I make is the simple soft shell taco and a habanero burrito-both real simple so post any of your recipes-

This dish is really hot :evil::evil::evil: Chiles poblanos rellenos de atun/Poblano peppers filled with tuna
Ingredients
300g/10½oz tinned tuna in oil, drained and crumbled into largish chunks
4 poblano chillies
1 red onion, very finely chopped
1 large ripe tomato, very finely chopped
1 sprig of fresh oregano, leaves torn and roughly chopped
2 tbsp of white wine vinegar
4 tbsp of extra virgin olive oil
salt
freshly ground black pepper
Method
1. Start by preparing the chillies. Carefully burn them on the stove or under a grill turning them from time to time until they are black all over. Put them in a plastic bag and wrap them in a tea-towel, so that they sweat.
2. In a large bowl, prepare the filling by mixing the rest of the ingredients. Taste and adjust the seasonings.
3. When the chillies are cool, take them out of the bag and peel off the burnt skin. If you need to, use a kitchen towel and a blunt knife to get rid of the burnt skin. Using rubber gloves, cut a slit lengthwise and carefully take the seeds out.
4. Stuff the chillies with the tuna mix. If you want this to be vegetarian, substitute the tuna with crumbled feta cheese.
5. Serve the chillies on a bed of colourful lettuces and decorate with red onion rings. Sprinkle some more oregano leaves, oil and vinegar on them. These are very nice for summer. Eat in July and August when poblanos are in season.

Mexican Hot Dish Recipe
I won't lie, I know nothing about recipes so this is ripped straight from the internet. If you die after eating it, I shall not be held responsible lol...
SPICY CHICKEN NACHO BAKE
5 c. round tortilla chips
1 (16 oz.) can refried beans
1/2 c. salsa
2 c. (8 oz.) Kraft shredded taco seasoned cheese, divided
2 c. cooked, shredded chicken or turkey
1 tsp. Mexican seasoning
1 green onion, sliced
1 tomato, chopped
Lettuce (optional)
Preheat oven to 400 degrees. Line 9x13 inch glass baking dish with chips. Mix together refried beans, salsa, 1 cup cheese; spread evenly over chips.
Mix together meat and seasoning, sprinkle evenly over bean mixture. Top with remaining 1 cup cheese and onion; bake 15 to 25 minutes or until hot. Garnish with tomato and serve with lettuce and extra salsa. Makes 8 appetizers or 4 main dish servings.
seriously tho, imma have to ask my wife for this one recipe, its a drink recipe tho... but really good. Kinda like a mexican mimosa. I'll post it later for your enjoyment
