There have been over 30 "wars" since WW2, most lesser regional conflicts. Nuclear powers have been involved in many of them, although none directly against each other except Pakistan and India on a limited scale.

The main risk of nuclear war now is a terrorist nuclear strike and how the attacked country responds.
Regardless of the response, it is highly unlikely that any 3rd party is going to get involved because of Mutually Assured Destruction.
That is why conventional strength is growing more important. Nobody can risk pushing the button.
