Weird, but say they were actually abducting cows. There could be some logical since behind it.

They use us as a test subject for something, but they can't honestly find a way to do it massively, they study us and realize we use a-lot of dairy(it's almost everywhere, milk,cheese,bread,etc..) thus they do tests on cows.
