CTR Crash Team Racing - I still play this regularly even now on PS3, got the PS1 game on my shelf next to all my PS3 games, the box for it is all beat up and broken by the game still works flawlessly, easily the best cart racing game out there.
Tony Hawks Pro Skater 2 - was my first Tony Hawks game, the OST brings back all those memories of playing it.
PS2:
GTA Vice City - definitely the game I played the longest, probably the defining game of my teenage years.
Tony Hawks Underground - First PS2 game, and man did I love it, also had the best story from any Tony Hawks game, was nice to have a serious story not the stupid shit we got in THUG2 and THAW. Something believable you could immerse yourself in a little, I loved all the levels and the progression from Novice to Amateur and finally getting signed and going pro, it was like a movie or something, getting stuck in Moscow and everything going tits up. It was spot on.
Crash Bash was nice, but CTR was best! I'd race my friends all the time, and it was super fun on the ice level. I miss couch co-op.
