I don't think dedicated servers is the correct term in the case of this game, more like dedicated hosts. You can still get host in some of the lesser played modes.

You can get host in any game mode using force host, although they say it's dedicated.

All you need to do is wait for a forcehost eboot to come out for the ghosts 1.09 update, you'll get host no matter what(make sure you have a open nat type). They do have dedicated servers but you'll get host with a forcehost eboot :p
