So i'm trying to change the color of the text that displays from red, so I change the 255 value up and down but all that does is change the brightness of the color(red).

Final question would be is there something i'm doing wrong? If so could anybody direct me in the right direction or help me learn how this works that would be great.

Try setting G and B to 0 and Red to 255 or lower them

Just make a loop that will change the color and the size
