That would probably be fine. For what you want, you won't be able to run Minecraft on max settings with high FPS but it will do the job.
My build was specced up for some light gaming as it had an outdated GPU that is capable of running games such as Minecraft, Sims, other GPU Friendly games.
The CPU is much much better, always go with Intel. And Motherboard provides lots of upgrade possibilities in the future.
If you buy that one, and then you decide you want to do some gaming on it, or just a general upgrade to make it faster then you will have to buy a new Motherboard, and PSU on top of whatever you want to upgrade.
