if you have a PC copy of the game then you can convert the PS3 save to PC and use the Console Commands to mod all that you want, then convert the save back to PS3...

(CC you need to do all that stuff that you want)
showracemenu (will open the character creation menu, to change the name)
Player.setlevel 1000 (For level 1000)
player.modav carryweight 999999 (For carrying weight)
player.additem f 1000000" (this will add 1000000 gold)
