It was somewhat logical for them to base it on Nürburgring Nordschleife. For many reasons:

- It is a widely known course that is proving to be quite a challenge for anyone who thinks they can easily master any track (with literally any car of course apart from just using LMP cars and/or rally cars).
- Apart from Circuit de la Sarthe which hosts 24hr LeMans race, Nürburgring is also very formidable in hosting similar event. Again unlike Circuit de la Sarthe, there is only one "main" straight. In other words instead of competing for the most power down a relatively (even with barriers on) straight course, Circuit de lar Sarthe in my opinion is no match for Nürburgring. Nürburgring is almost like a challenge for maneuverability at literally to almost to no end.
- You see a fair few test road cars (prototypes) are being put on Nürburgring more and more. It could be a tell-tale sign for certain car manufacturers for many reasons in which they may not want to openly discuss.
- That N24 GT Academy (or at least a similar one) was raced on Nürburgring in real life. Yamauchi Kazunori is no stranger to the very same course for he has either raced and/or has most likely been there a couple of times. One can easily see that in GT-TV in GT5 for instance.

There are other lesser known reasons which may also be related. Such as the fact that the track was faced financial hardship and was sold to a buyer. Whilst it may also be ideal to focus on other tracks that GT5 does not currently have, I guess it does seem on almost every level that Nürburgring should be featured.

Personally? I find Nürburgring Nordschleife course a very refreshing course to drive even if I'm driving it in the simulation. To think anyone whom may think other courses in GT5 a yawn, go for a run on Nürburgring Nordschleife. You'll probably find yourself stimulated by the difficulties faced when driving on that track. Also it does signify in my sense that either Yamauchi-san and/or the PD team still holds many respect for Nürburgring. Not to mention that the very same course was also featured in the long ending to GT5 followed by recording of Shutoku expressway (Japan's most notorious highway).

If it does matter anyone about the sources, wikipedia has it all. Before you announce my post as a copy and paste I suggest you to have a good hard look at your unwillingness to post your own version and not a copy/pasted derivative from wikipedia.
