i think the reason for this is that you now can store 500 cars in your garage and 9999 cars in your carpark!

Shouldn't that data still be saved to the game save? What if it was lost?

I also noticed that my car images (thumbnails) haven't been installed yet. I think the game may do that in the background during idle times. I wonder if having very few thumbnails is the reason my game save is so small?

your progress (races won, garage,...) is saved in to your savedata.

from the moment you buy a car, you should have a thumbnail from that car. did you delete your gamedata and reinstalled it again? if so, than it's normal that you don't have a thumbnail of all your cars. you can update your thumbnails in the garagemenu.
