Just be sure to have the firmware, that you currently have installed on the PS3, on a flash drive usb. You will have to install the firmware again on the new HDD. You will not lose your Jailbrake status if you do this.
You will lose it if you install OFW. So make sure to have you CFW on the Flash drive.
